I've recently fallen in love with 25 30 Espresso and its now one of my favorite spots to bring my kids before school for breakfast and an afternoon spot for sweet tea with a friend. The moment you walk into 25 30, you feel welcome, my #1 sign of a great coffee house.
Starting tomorrow night they are kicking off The Yard, their outdoor space which will be adorned with lawn games, high-top barrel tables, seating and market lighting. Coffee, mocktails & Beth's famous desserts will be available all evening. The Yard will be open every Thursday, Friday & Saturday night, open till 9pm.
Beth, 25 30's amazing baker was kind enough to share her recipe for Hummingbird Cake. Perfect for serving with your favorite cup of coffee! Enjoy!
Beth's Hummingbird Cake
3 c. AP Flour
1 tsp. cinnamon
1 1/4 tsp. salt
1/4 tsp. nutmeg
1 tsp. baking soda
3 beaten eggs
1 1/2 c. sugar
1 1/3 c. oil
1/4 c. softened butter
2 tsp. vanilla
2 c. mashed bananas
1 8oz. can crushed pineapple
2 c. toasted pecans
Mix dry ingredients with wet ingredients. Bake at 350 for 35-40 until toothpick comes out clean. Cool & top with cream cheese frosting.
