Mother's Day


Happy Mother's Day to all you Mamas out there! Fredericksburg Living & Fredericksburg Foodie have partnered together to bring you two recipes, Sausage Brie Casserole & Strawberry Cream Cheese Bread, that will make an excellent brunch spread if you'll be cooking tomorrow for a special mom in your life. (For me, I've put in an order of Sugar Shack & Mimosas.)


Fredericksburg Living & I enjoyed a morning shopping at The Fredericksburg Farmer's Market where we picked up the bread, asparagus strawberries & sage sausage. The eggs were from my best friend, that has a full suburban farm in her backyard, and delivered fresh the morning we were cooking. After the recipes had been prepared and we were ready to serve, Fredericksburg Living & I invited four friends over to enjoy the meal together.


Sausage & Brie Casserole

1 8oz. round of Brie, trimmed & cubed
1 lb. ground breakfast sausage or ground sage sausage, cooked & drained
6 slices of white bread, crust removed
1 1/4 c. parmesan cheese
7 eggs, divided
3 c. whipping cream, divided
2 c. whole milk
1 tsp. dried sage (decrease to 1/2 tsp. if using sage sausage)
1 1/4 tsp. seasoned salt
1 tsp. dry mustard
3/4 c. to 1 c. chopped asparagus
Parmesan Cheese - Garnish

Place bread into a lightly greased 13" x 9" baking dish. Place crumbled sausage & asparagus on top of bread. Whisk 5 eggs with 2 c. cream and next 4 ingredients. Pour over casserole. Cover and chill for 
8 hours. 

Whisk remaining 2 eggs and 1 c. cream. Pour over casserole & bake on 350 for 1 hour. Garnish and bake for 5 more minutes. 

Strawberry Cream Cheese Bread

1/2 c. butter, softened
1 c. sugar
4 ounces cream cheese, softened
2 eggs
1 tsp vanilla
2 c flour
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp kosher salt
1/2 c buttermilk (full fat if you can find it)
1 1/2 c. strawberries, chopped

Cream butter, sugar and cheese till light and fluffy. Add eggs, one at a time. Mix in vanilla. In a separate bowl, combine the dry ingredients. Blend dry ingredients with butter mixture, stirring only until combined. Fold in the berries. Batter will be thick. Place in loaf pan and bake on 350 for about 50-60, till toothpick comes out clean. Cool before serving.
