Cinco de Mayo




Super excited that we have a full weekend of celebrating! Cinco de Mayo on  Friday night & Kentucky Derby on Saturday. I'm mostly concerned with the culinary celebrations, of course! There are so many delicious Mexican & Tex-Mex options in Fredericksburg but if you're partying on your own patio, here are two recipes for you!

So first up, Cinco de Mayo. I'm preparing my favorite Mango Margaritas & Homemade Salsa. Both are super quick & simple to prepare. Enjoy!

Mango Margaritas

1 20 oz. jar cold mangoes
1 6 oz. can limeade
1 c. tequila
1/2 c. fresh orange juice

Pour entire jar of mangoes into blender. Add remaining ingredients and blend until smooth. Remove half of mixture and reserve. Add 5 cups of ice and blend until smooth. Repeat with reserved juice.



Homemade Chipotle Salsa

1 small jar of chipotle peppers in adobo sauce (THESE ARE HOT, So I only start with 1 pepper)
2 10 oz. cans of original Rotel 
1 28 oz. can whole tomatoes with juice
1/2 c. fresh cilantro leaves
1/4 c. chopped yellow onion
1 clove garlic, minced
1 whole jalapeno, sliced thin, with seeds & membranes for heat
1/2 tsp. ground cumin
1/4 tsp. salt
1/4 tsp. sugar
1/2 whole lime, juiced

Combine all ingredients in a blender. Blend until it has reached your desired consistency. Give it a taste and adjust seasonings & peppers. Chill for about an hour before serving. 

*This recipe makes a lot of salsa, so I always can it up in mason jars, it'll keep for a while & makes great gifts*
