Teacher Appreciation Week - Hummingbird Cake




Fredericksburg and the surrounding areas have the BEST teachers! Next week is Teacher Appreciation Week and I'm planning on making this recipe for Hummingbird Bread to give out to the kid's teachers. If you've never had Hummingbird Bread/Cake, you're missing out on this southern classic! Moist, flavorful and tender and it just screams SPRING! 


Hummingbird Cake/Bread
*I'll be baking this in mini-bread loaves but you can use any pans you prefer.

3 cups all-purpose flour
1 tsp. baking soda
1 tsp. cinnamon
1 tsp. sea salt
1 c. sugar
1 c. light brown sugar
1 1/4 c. canola oil
3 large eggs
2 tsp. vanilla extract
2 c. mashed very ripe bananas, about 5 large bananas
1 8oz. can crushed pineapple, drained
1 1/2 c. chopped pecans
Cream Cheese Frosting, below

Preheat oven to 350. Butter and flour your pans. If using round pans, line with parchment paper. Stir together the flour, baking soda and spices, set aside. 

In a stand mixer, using the paddle attachment (or in large bowl, using hand mixer) beat both sugars with oil for 2 to 3 minutes, until smooth. Add eggs, beating well after each addition. Mix for two minutes. The batter will be light and fluffy. Mix in vanilla, bananas and pineapple until just combined. With the mixer on low, mix in the flour mixture in portions until combined. Fold in 1/2 cup pecans. 

Bake in prepared pans, the timing will depend on the size of the pans you are using, 40 minutes for round or rectangle and about 25 for mini loaf pans.

Let cakes cool completely before frosting them. I'll be frosting the tops of my mini-loaves but this frosting recipe makes enough to frost a complete round/13x9 cake.  Sprinkle frosted cake with remaining chopped pecans.

  Cream Cheese Frosting

8 Tbs. unsalted butter, room temp.
2 (8oz.) packages cream cheese, room temp.
1 Tbs. vanilla extract
5 to 6 cups powdered sugar

In stand mixer with whisk attachment, beat butter, cream cheese and vanilla until smooth and cream. About 4 minutes. Slowly add in the powdered sugar, beating for 6 minutes until light and fluffy.
