Summer



On a recent trip to The Hershey Pantry in the fragrant town of Hershey, PA, I ordered a side of Sweet Summer Corn Pasta Salad. I don't believe I've ever had a pasta salad that contained corn so out of curiosity I chose this to accompany my entree of crab stuffed portobello mushrooms. It was so simple and yet so delicious. I literally pulled out a piece of paper to jot down the ingredients.

I made my replication today and it was just as good. Here is the recipe, enjoy!

1 lb. of penne pasta (I used whole wheat), cooked & drained
3 ears of fresh sweet corn, cook & cut kernels off
1/2 c. diced red onion
2 tbs. fresh flat parsley
2 tbs. fresh cilantro
1 tomato, diced
1 can of Great Northern Beans, drained & rinsed
Olive Oil to coat and a drizzle of balsamic vinaigrette

Mix everything together in a large bowl and serve at room temperature.

If you ever find yourself in Chocolate Town, please be sure to visit The Hershey Pantry. They have a beautiful new outdoor patio in addition to their bustling main dining area. Be prepared to wait a bit for a table as this place is a local favorite serving three meals a day and wicked homemade desserts.
